Fruits and vegetable are the basic need of all human beings; it is used either for direct consumption or by processing into valuable products. Among various forms of products, the demand is growing for frozen fruit and vegetables in the metro cities, especially due to convenient applications, better storage/shelf life, an increasing number of working females, growing health consciousness, etc. that perceive for ready to eat convenience foods. Freezing of fruits and vegetables will provide RTE product in the market with good nutritional quality, and helps in wastage control. In India, food processing is an emerging sector, the government of India is supportive in establishing food processing units. Various laws have been set for strengthening the food sector, reinforcing food safety and security by producing value-added products as well as meeting the international standards, which is supporting in capturing the international market.
