Earlier coconut was used in limited processes like copra production, coconut oil production and for the basic domestic requirements; but now it has been processed into a number of products such as desiccated coconut, defatted coconut powder, coconut milk powder, packed tender coconut water, coconut vinegar, coconut jam and skim milk-based beverages. Coconut processing will show us a prominent plot in the coming years, it will introduce new products in the market, quality of the product, and its convenience as well as strengthen the shelf life. Coconut products have good acceptability and increasing demand in the Indian as well as international market considering its good taste, thirst-quenching properties, nutritional and medicinal benefits, wide applicability in pharmaceutical, cosmetics, and foods like desserts, bakery items, ice creams, chocolates, and other confectionery items.
